Made according to the traditional recipe from Aix-en-Provence, the Calissons combine the flavors of the highest-quality California almonds, melon and orange peel ground together, spread atop a wafer base, and coated with royal icing. It is a savory blend of almond delicately married with cantaloupe and a hint of orange. Calissons have a texture not unlike that of marzipan, but with a fruitier flavor. Believed to have its origins in medieval Italy, Calissons are thought to have been introduced to Provence in the 15th or 16th century.
